Sweet Heat Espresso

 


Ingredients

Good quality espresso
2% milk
2 TBSP dark chocolate sauce
1/2 tsp black pepper

1 tsp chili powder

Directions

Prepare espresso and steam milk. Once milk is steamed add chocolate sauce and mix together. Pour over espresso. Add pepper and chili powder and stir together. Top with whipped cream and shaved dark chocolate.

Tornado Twist

 

Ingredients

12 fluid ounces cranberry-raspberry juice
1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated

Directions 

In a pitcher, mix cranberry-raspberry juice with lemon-lime soda. Pour over ice and serve.

Mexican Recipe: Baked Breakfast Taquitos

 


Ingredients

1 TBSP unsalted butter
2 cups deli ham, chopped
6 large eggs, beaten
3 TBSP half-and-half
salt and pepper
4 scallions, diced
12 (6-inch) flour tortilla
1 1/2 cups shredded Colby Jack cheese
cooking spray
kosher salt
salsa and sour cream for serving, optional

DIRECTIONS

1. Preheat oven to 425F. Line a baking sheet with foil, coated with non-stick cooking spray.

2. Heat the butter in a large non-stick frying pan over medium-high. Add ham and saute until starting to crisp, 3 - 4 minutes. Add eggs and half-and half to the pan and stir to scramble. Season with a touch of salt and pepper to taste. Transfer to a medium bowl. Gently mix in the scallions.

3. Microwave the tortillas for 20 - 30 seconds until pliable. Place about 1/4 cup of the egg filling into the lower third of each tortilla, followed by 2 tablespoons of the cheese. Roll up tightly and place seam-side down on the baking sheet, making sure the rolls are not touching each other. Spray the tops lightly with a little cooking spray, followed by a sprinkle of kosher salt.

4. Bake for 12 - 14 minutes until golden and crispy. Serve with salsa and/or sour cream on the side if desired.

NOTES: For added spice, swap out the Colby Jack cheese for Pepperjack.

Makes 12 Prep Time: 20 Minutes Cook Time: 15 Minutes Total Time: 35 Minutes

I found the what to stock up on, Cooking Measurement Equivalents and Metric Measurement Equivalents very useful and handy!

I haven't had a chance to make anything yet but can't wait to try some out!

Lazy Morning Breakfast Casserole


Ingredients

8 slices of bread (cubed)
1 lbs. ground sausage (cooked)
3/4 cup cheddar cheese
1/2 cup mushrooms (sliced and sautéed)
5 eggs
1 3/4 cups milk

Directions

1.  Preheat oven to 350 degrees. Place cubed bread in casserole dish, sprinkle cooked sausage on top.

2.  Add cheddar cheese and mushrooms.

3.  In a separate bowl, beat eggs and milk and then pour over top.

4.  Let stand for 5 minutes, then bake for 35 minutes until bubbly.

Avocado and Chicken Tea Sandwichs

 


Ingredients

1 ripe avocado
1 Tbsp. chili paste (or hot sauce)
1 Tbsp lime juice
6 slices of bread
Roast chicken slices

Directions

1. Mash avocado in bowl and add chili paste and lime juice. Spread avocado paste on 6 slices of bread.

2. Top three of the slices with roast chicken slices. Add top slices to the sandwiches and trim off crusts.

3. Cut into squares or triangles. Yields 12 small sandwiches.

Hot Apple Tea


 

Ingredients

1 cup water
3 whole allspice
2 individual black tea bags
1 cup unsweetened apple juice or cider
2 tablespoons honey

Directions

1. In a small saucepan, bringer water and allspice just to a boil, add tea bags.

2. Remove from the heat, cover and steep for 3 minutes.

3. Discard allspice and tea bags.

4. Stir in apple juice and honey, heat through.

Cranberry Iced Tea

 


Ingredients

1 quart tea, brewed and cooled
2 cups cranberry juice
Juice of 1 lemon
2 Tbsp. sugar

Directions

1.  Combine all ingredients in a pitcher then serve over ice in tall glasses.

Yields 4 to 6 servings

Mexican Drink Recipe: Refreshing Lemon-Lime Drink

 

Ingredients

1 can (12 ounces) frozen limeade concentrate, thawed
2/3 cup thawed lemonade concentrate
1 teaspoon orange extract
1-1/2 cups water
6 cups chilled diet lemon-lime soda
1 medium lemon, sliced
1 medium lime, sliced

Directions

1. In a large container, combine the limeade and lemonade concentrates and orange extract. Stir in water.

2. Just before serving, stir in lemon-lime soda. Serve over ice. Garnish with lemon and lime slices.

Yield: 3 quarts (12 servings, 1 cup per serving)

Fruit Relish for Meat

 

Ingredients

1/3 C dried dates, sm dice
1/3 C dried cranberries
1/2 C cranberry juice
3 Tbsp Cilantro, chopped
1 1/2 Tbsp Olive oil
1/4 C toasted nuts
Pan drippings (if you have some)

Directions

Combine all, cover with plastic wrap and microwave 20-30 seconds.

Or if you have meat drippings in a pan, toss everything in the pan and stir constantly until the fruit has plumped up a little.

Now use to top anything meaty! Burgers, tacos, sliced meat
