Moist Chocolate Cake

 


Ingredients

2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup baking cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 large eggs
1 cup strong brewed coffee
1 cup buttermilk
1/2 cup canola oil
1 teaspoon vanilla extract
1 tablespoon confectioners' sugar
Directions

1.  In a large bowl, combine the first six ingredients.

2.  Add the eggs, coffee, buttermilk, oil and vanilla; beat on medium speed for 2 minutes (batter will be thin).

3.  Pour into a greased and floured 10-in. fluted tube pan.

4.  Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean.

5.  Cool for 10 minutes before removing from pan to a wire rack to cool completely.

6.  Dust with confectioners' sugar.

Yield: 12 servings
